Chicken Tagine


One of the questions we hear most frequently is "what do I cook with a preserved lemon?" Preserved lemons have been made for thousands of years, and are a key ingredient in cuisines as diverse as southern Italian and Cambodian. Preserved lemons are an essential part of Moroccan cuisine, where they add the salty, tangy flavor essential for dishes such as salads, meat and vegetarian stews and even a spicy dip made of just preserved lemon and harissa. The classic Moroccan dish is a tagine, where vegetables, chicken or lamb is stewed together with lemons and spices. Tagine is always a little bit different, and varies from region to region and cook to cook. Sometimes it has prunes, sometimes it has golden raisins. Sometimes there are tomatoes, or cloves or whatever vegetables the chef has on hand. We could write a recipe for it, but this one, by Eric Ripert of Le Bernadin, is a great place to start. @SusieFoodie took this cute photo of us at the first East Bay Underground Farmer's Market in Oakland, where we sold out of half of our delicious offerings. Her whole Flickr slide show is worth watching if you feel like drooling over decadent cupcakes and talented food-making hipsters.
Thanks to our friends and fans who came out to support us. I say this every time but it's still true--we couldn't do it without you!
We'll be selling again in Sausalito on 9/18 at the Homegrown Marin Market, so let us know if you want to pre-order anything.

East Bay Underground Market Sat. 8/7 5-11pm in Oakland!

The date is finally confirmed and the location secured and mo foods will go to market again this Saturday!

All the info is here, including the address in Oakland: the parking lot on 24th and Broadway. We're looking forward to an outside market this time since we already know it'll be a few degrees warmer in Oakland (represent!).

As usual with the Underground Markets, be sure to sign-up in advance (if you haven't already) to avoid lines.

Here are some of the delicious items we plan to have for you:

-Hand-Squeezed Meyer Lemonade
-Plum Syrah Blackberry Preserves
-Preserved Meyer Lemons
-Nasturtium Pesto
-Oven Dried Plums w/Balsamic & Thyme
-Kale Seaweed Salad

There may be a few more surprises in the works depending on what additional ingredients we get this week, so stay tuned.
